You lift the glass and inhale. Aromas of violets mingle with tobacco and spice. You get chills, and take another deep breath before tilting the glass back ... smooth as silk, the Pinot Noir glides across your tongue. The aromas are translated into a cascade of brilliant flavor. Weeks of effort by the winemaker and years of aging have brought the wine to this point. What wine making skill it must have taken to shepherd the grapes to this amazing conclusion! Alone the wine is fantastic, but when paired with food, it becomes truly phenomenal. Paired with chocolate the cherry flavors shine through. Paired with steak or cheese, and it's character changes ... still incredible, but complex new flavors emerge.
My favorite indulgence in life is to spend unhurried hours relaxing in conversation with good friends, nibbling a scrumptious cheese and sipping a lovely Pinot Noir. There's nothing quite like it to make you appreciate all that life has to offer.
